BLT Guacamole

Guacamole should be the poster child for the phrase, “Don’t judge a book by its cover.” ย I mean honestly, it’s a pile of green goop. You don’t look at guacamole and say, “Wow, that looks sooooo good. I want to stuff my face with that pea colored mush!”

Okay, maybe some of us say that, but I bet it’s because we’ve already tried guacamole and know how out of this world awesome it really is.

If I were an alien visiting earth for the first time and saw humans eating bowls of guacamole, I’d be questioning which planet had intelligent life.

Thankfully, I’m not an alien. And I’ve had plenty of opportunities to try the wonderful thing that is guacamole. I happen to love the mushy green stuff! It’s creamy, savory, lime-y, and southwestern-y (I’m in the business of creating new adjectives today). I’ve made homemade guacamole for awhile now, and am always amazed at how a few simple ingredients can turn into such a delicious (if not a bit homely) snack.

My go-to guacamole recipe is pretty standard–avocados, red onion, jalapeno, cilantro, lime juice–emphasis on the lime and cilantro! But occasionally I crave something different. A little departure from ordinary. And this BLT Guacamole fits the bill perfectly.

The Mr. is convinced that anything can be made infinitely better if you just add bacon. I question his wisdom at times, but with this guac he definitely had the right idea. The stars of this recipe are still the same–avocado, cilantro, and lime–but bacon, tomato, and lettuce add some surprising crunch and deliciously different taste.

Smear this guacamole on hunks of bread or go the traditional route and use a tortilla chip. It may not win any beauty contests, but this BLT guacamole is a fantastic twist on that beloved green dip.


BLT Guacamole
Serves 4

Ingredients:
2 avocados
1/2 lime, juiced
1/4 cup cilantro, chopped
1 teaspoon Kosher salt
3 slices bacon
1 slicer tomato, chopped
2 pieces crunchy leaf lettuce, chopped

Directions:
1. Fry bacon in a skillet over medium high heat until it’s nice and crispy. Place the bacon on a plate lined with paper towels. When cool, crumble into small pieces.

2. In a medium bowl, use a fork to smash avocados. Stir in lime juice and salt.

3. Add cilantro, bacon, chopped tomato, and leaf lettuce and mix together. Serve with tortilla chips or hunks of crusty bread.
